Native American Cooking: Simi Chumbo
Here's a delicious version of a Native American cornmeal dish. Its easy and fun ... and something different. Its kind of like a nut pudding.
When studying about a culture or society ... even about a geographic location, include foods from the area to add authenticity and fun to your unit.
Simi Chumbo
1 pint sweet milk
1/4 t. salt
2 T. sugar
3 eggs
3 T. corn meal, heaping lump of butter
1 c. hickory nuts, chopped fine
Bring the milk to a boil, add meal, sugar, butter and salt and cook slowly until it thickens. Remove from heat, cook, and add the well beaten eggs. Put in a baking dish and bake for 30 minutes in a moderate oven.
