Civil War Cookin': Griddle Cakes

SWEET MILK GRIDDLE CAKES WITHOUT EGGS, NO. 1

1 tsp. baking soda
1 pint milk
1 heaping teaspoon salt
1 pint flour
2 tsp. cream of tartar
additional pint milk

Dissolve a teaspoonful of soda in a pint of sweet [as opposed to sour] milk, strain it and add one heaping teaspoon of salt; sift with a pint of flour two teaspoonfuls of cream of tartar, mix the flour in a pint of sweet milk, and stir it well to get out all lumps; then mix in the milk and soda, and bake immediately; if too thin to suit, add more flour; some like thin and some thick cakes.
