Mississippi Cake

MISSISSIPPI CAKE

1 pint cornmeal
1 pint buttermilk
2 tbs. butter, melted
2 eggs
1 tsp. salt
1 tsp. saleratus*



Editor's note: Saleratus was one of the many early rising agents used when yeast was not available or desired. It has been superceded by baking powder, and we suggest you use that instead.



One pint of the best yellow cornmeal, a pint of buttermilk, two tablespoonfuls of melted butter, two eggs,
a teaspoonful of salt, and a teaspoonful of saleratus.
