Dutch Oven Chicken Casserole
Here's another activity for your outdoorsy kids to give a try. Its also a great activity when you are studying about pioneering skills. It can be done in a charcoal fire, a wood fire oustide, or even in a fireplace inside.
Ingredients:
4 pounds of boneless/skinless chicken
4 cans of cream of chicken soup
2 16 oz bags of frozen mixed vegetables
2 boxes of stuffing (e.g., Stove Topis one name brand)
1 1/2 cup water
Directions:
Lightly oil the dutch oven and cook the boneless/skinless chicken. Drain off any oil and chop the chicken into bite-sized pieces. Mix together all ingredients. Be sure and stir the seasoning packets from the stuffing into the mixture. Place on hot coals for 20-30 minutes. Place 12-14 coals on top of the oven, and 8-10 underneath. Casserole is done when the vegetables are hot and mixture is bubbling.
While that is cooking you could make a dessert or salad or side dish to accompany the meal and keep them busy.
Here's a simple recipe for "Ants on a Log" if you would like to use it as an appetizer for this meal.
Sliced celery sticks and coat with peanut butter and add raisins on top for the "ants."
