Christmas Peppermint Creams

This is a very fun and easy candy for the kids to make. The kids can then put them in a airtight container and give them as gifts.

Ingredients:
1 jar (7 ounces) marshmallow creme
2/3 cup butter or margarine, softened
1 t. vanilla extract
6 cups sifted, powdered sugar (aka confectioner sugar)
1/4 cup finely crushed peppermint candies
1/2 cup (3 ounces) semisweet chocolate chips
6 ounces chocolate candy coating

Directions:

In a large bowl, beat marshmallow creme, butter, and vanilla extract until well blended. Grandually add confectioners sugar until mixture is well blended. Knead mixture by hand 2 to 3 minutes. Add crushed peppermint. Shape teaspoonfuls of candy into 3/4-inch balls. Place on baking sheet lined with waxed paper. Chill one hour or until firm.

Melt chocolate chips and candy coating in the top of a double boile over hot water. Using a fork, dip candies halfway into melted chocolate, shaking off excess chocolate. Return to baking sheet lined with waxed paper. Chil until chocolate hardens. Store in an airtight container in a cool place.

Yield: about 7 to 8 dozen candies.
