Fun Food: Homemade Pudding Pops

You can make an almost infinite number of variations on this super simple recipe to suit any child's taste, just by changing the flavor of the pudding and the "optional" ingredients. You can even use homemade pudding mixes.

3 cups milk (whole, low-fat, skim, etc.)
1 package instant pudding mix (4 serving size)
9 small paper cups
9 popsicle sticks

1. Pour milk into a bowl. Add pudding to milk and beat with a wire whisk until smooth, about two minutes.

2. Set paper cups on cookie sheet. Pour pudding mixture into paper cups. Insert a Popsicle stick into center of each cup.

3. Freeze until firm, about four hours or overnight. If not using pops within 24 hours, store in a plastic bag.

4. Dip pops into hot water for ten seconds to unmold.

Yield: 9 pops

Make a s'more pop by placing 3 or 4 miniature marshmallows and about one tablespoonful of miniature chocolate chips in the bottom of the cup before pouring in chocolate pudding.

Put ground nuts, sprinkles, or candy chips in the bottom of the cup before pouring in the pudding.
